Zucchini and Ground Turkey Boats

this is a really easy and healthy dinner option! it’s great for lunch the next day too.


  • 4 Zucchini
  • 1 tsp Olive Oil
  • 1 1/2 pounds of Ground Turkey
  • 2 cloves Garlic
  • 1 tbsp Italian Seasoning
  • 1 cup Marinara Sauce
  • Shredded Mozzarella Cheese
  • Parmesan Cheese
  • Salt & Pepper


  1. Preheat oven to 400F
  2. Heat olive oil over medium high heat and brown ground turkey and garlic. Season with salt & pepper
  3. Stir in italian seasoning and marinara sauce
  4. Half the zucchini lengthwise and scoop out the middle, creating a “boat”. Spray a baking dish with Pam and place zukes in it
  5. Fill boats with turkey mix
  6. Generously cover tops of boats with mozzarella cheese, then sprinkle parmesan cheese on top of that
  7. Before placing into oven, give the tops of the boats a quick spray of pam (this will help the cheese brown and make a nice crust)
  8. Place into oven and cook for 18 minutes (zukes will be tender and cheese will be bubbling)
