Smashed Potatoes


  • Small Red Potatoes
  • Olive Oil
  • Salt/Pepper


  1. Put cleaned potatoes into a pot of water (with a little bit of salt) and bring to a boil — simmer until fork tender (35-45 minutes)
  2. Remove from pot and cool for about 5 minutes. Transfer to a foil-lined baking sheet, coated with cooking spray
  3. Press down on potatoes to smash them
  4. Brush tops with olive oil and then sprinkle with salt and pepper
  5. Bake at 425 degrees for about 30 minutes. Halfway, turn potatoes and coat with olive oil and season with salt/pepper
  6. Serve with sour cream, bacon, butter, etc.
