been watching some sam the cooking guy lately… i think i can tackle these…
bacon-wrapped scallops
ingredients
- 1 lb sea scallops, defrosted
- 12 slices of pre-cooked bacon
- 1/4 cup teriyaki sauce
- 2 skewers
- 1 tbsp toasted sesame seeds
steps
- preheat bbq
- tightly wrap each scallop with a strip of bacon and skewer
- spray bbq with non-stick spray, place skewers on grill, and leave ’em alone
- cook for 2-3 min or until grill marks develop, then flip
- brush top with sauce, then leave alone for another 2-3 minutes
- remove from grill and then brush the other side with sauce
- sprinkle sesame seeds before serving

roasted yellow pepper pizza
ingredients
- 12″ boboli pizza crust
- 5 oz tub of goat cheese
- 2 oz arugula
- 2 yellow bell peppers
- parmesan cheese
- salt & pepper
steps
- preheat oven to 425
- roast bell peppers by blackening them over fire, then peel charred skin off
- spread goat cheese on crust, cover with arugula, and then bell peppers on top
- bake 10-12 min or until brown/crispy
- remove from oven, season with salt & pepper, and sprinkle with parmesan cheese

ingredients
- 6 pk bratwurst
- 1 white onion, finely sliced
- 1 green bell pepper, thinly sliced
- 2 bottles of newcastle
- 1/2 cup brown sugar
- 3 tbsp butter
- 1/4 cup apple cider vinegar
- pepper
- sandwich rolls
steps
- in large foil pan, add onions, green pepper, and butter
- cook on bbq grill until butter melts and veggies start to brown
- add beer, sugar, vinegar, and pepper to pan and mix well
- cook to simmer
- add brats to pan and let cook for 5-10 min
- toast buns on grill while brats cook
- place brats in bun along with peppers and onions… you can add mustard if you wish
