Instant Pot Beef Stroganoff

it’s creamy, meaty, noodley, and ALWAYS hits the spot


  • 2 tbsp unsalted butter
  • 1 lb ground beef
  • 8 oz crimini mushrooms (sliced)
  • ½ medium sweet onion (diced)
  • 3 cloves garlic (minced)
  • 1 can of condensed cream of mushroom soup
  • 5 cups beef stock
  • 1½ cups dried egg noodles
  • 2 tbsp all-purpose flour
  • ½ cup sour cream
  • salt and pepper


  1. Set Instant Pot to “sautee” setting
  2. When hot, melt butter in pot and brown ground beef
  3. Add garlic, mushrooms, and onions
  4. Cook down a little bit, then add beef stock
  5. Mix in cream of mushroom soup
  6. Min in flour
  7. Add noodles and fold them in
  8. Seal Instant Pot and cook on manual for 2 minutes, then release the pressure manually
  9. Mix in sour cream
