Zucchini and Ground Turkey Boats
this is a really easy and healthy dinner option! it’s great for lunch the next day too.
Ingredients
- 4 Zucchini
- 1 tsp Olive Oil
- 1 1/2 pounds of Ground Turkey
- 2 cloves Garlic
- 1 tbsp Italian Seasoning
- 1 cup Marinara Sauce
- Shredded Mozzarella Cheese
- Parmesan Cheese
- Salt & Pepper
Steps
- Preheat oven to 400F
- Heat olive oil over medium high heat and brown ground turkey and garlic. Season with salt & pepper
- Stir in italian seasoning and marinara sauce
- Half the zucchini lengthwise and scoop out the middle, creating a “boat”. Spray a baking dish with Pam and place zukes in it
- Fill boats with turkey mix
- Generously cover tops of boats with mozzarella cheese, then sprinkle parmesan cheese on top of that
- Before placing into oven, give the tops of the boats a quick spray of pam (this will help the cheese brown and make a nice crust)
- Place into oven and cook for 18 minutes (zukes will be tender and cheese will be bubbling)
