- Small Red Potatoes
- Olive Oil
- Salt/Pepper
Steps
- Put cleaned potatoes into a pot of water (with a little bit of salt) and bring to a boil — simmer until fork tender (35-45 minutes)
- Remove from pot and cool for about 5 minutes. Transfer to a foil-lined baking sheet, coated with cooking spray
- Press down on potatoes to smash them
- Brush tops with olive oil and then sprinkle with salt and pepper
- Bake at 425 degrees for about 30 minutes. Halfway, turn potatoes and coat with olive oil and season with salt/pepper
- Serve with sour cream, bacon, butter, etc.
