Salsa Verde Casserole

this recipe came from our local trader joe’s — had no idea they did such a thing. pretty smart of them since you get everything you need right there. this is super easy to make and it doesn’t take much time at all!


  • 1 pkg. (12 oz) pre-cooked carnitas
  • 1 jar salsa verde (or 1 tub of tomatillo salsa)
  • 1 can (15 oz) of pinto beans (drained/rinsed)
  • 1 bag of three cheese blend
  • 1 polenta


  1. Microwave (yes, microwave) the carnitas, which will render the fat
  2. Chop carnitas into bite size pieces
  3. Press polenta into bottom of 8×8 baking dish (use wet hands to make life easier for you)
  4. Mix carnitas with salsa and beans
  5. Pour mixture over polenta and top with ½ bag of cheese (or more)
  6. Bake at 350°F for 30 minutes
  7. Boomski.
