Instant Pot Beef Stroganoff

it’s creamy, meaty, noodley, and ALWAYS hits the spot
Ingredients
- 2 tbsp unsalted butter
- 1 lb ground beef
- 8 oz crimini mushrooms (sliced)
- ½ medium sweet onion (diced)
- 3 cloves garlic (minced)
- 1 can of condensed cream of mushroom soup
- 5 cups beef stock
- 1½ cups dried egg noodles
- 2 tbsp all-purpose flour
- ½ cup sour cream
- salt and pepper
Steps
- Set Instant Pot to “sautee” setting
- When hot, melt butter in pot and brown ground beef
- Add garlic, mushrooms, and onions
- Cook down a little bit, then add beef stock
- Mix in cream of mushroom soup
- Min in flour
- Add noodles and fold them in
- Seal Instant Pot and cook on manual for 2 minutes, then release the pressure manually
