Grilled Lemon Yogurt Chicken

i’ve never used yogurt in cooking until this recipe. yogurt marinates chicken really well.

i’m a big fan of mediterranean-style chicken and all these ingredients come together to bring the taste of those well-known restaurants home

also, while chicken breast is an easy recipe base to start from, it gets boring. the yogurt prevents it from getting dry on the grill, which is one of my biggest complaints about cooking chicken breast (my least favorite cut of poultry)

Ingredients

  • chicken breast
  • ¾ cup plain yogurt (whole milk or greek)
  • 2 tbsp italian seasoning
  • ½ tbsp garlic powder
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 lemon (juice)
  • 1 tsp salt
  • 1 tsp pepper

Steps

  1. mix all ingredients, except for the chicken, in a large bowl
  2. slice chicken breasts thin (lengthwise — easier to evenly cook)
  3. place chicken into bowl and marinate for at least 4-6 hours
  4. cook chicken on grill until they reach an internal temperature of at least 165°

Notes

  • goes great with rice or orzo (cooked in chicken broth) and a nice cucumber/tomato/feta salad (with olive oil and italian seasoning, salt to taste)
